This 18cm Chinese chef's knife forms part of the Kai Shun Classic collection of authentic Japanese kitchen knives. Ideal for chopping through meat, bones and other tough ingredients thanks to the subtly curved blade enabling you to rock back and forth on the chopping board with ease and the double-sided blade is designed to maintain its sharpness. Each knife in the series has been created using high-performance VG-MAX steel at Rockwell 60-61 with a double-bevel blade angled at 16° providing excellent edge retention and cutting performance. Other knives are also available in this range.
