MIYABI’s ice-hardening process locks in the blade’s long-lasting sharpness, with a Rockwell 63 hardness for superior edge retention.

The elegant Karelian (Masur) Birch handle, a rare wood once used in Fabergé eggs, ensures an ergonomic and beautiful grip. Each knife is hand-honed using the traditional Honbazuke method, creating a scalpel-like edge with a flower Damascus design.
